The most important gala for Spanish chefs, the Michelin gala, took place on the 28th of November last year, when the top restaurants in the country were presented with their awards. Of the 31 establishments that received a Michelin star, here’s a run-down of the 6 that are located in Madrid, in case you’d like to check out their mouth-watering menus. 

 

Restaurant OSA

Located in a two-storey chalet in the residential area of Madrid known as Colonia de Manzanares, the ambience resembles that of a small village. The kitchen is run by Sara Peral and Jorge Muñoz, whose creations combine traditional cuisine with more innovative techniques in which care for the raw material predominates. There is a set menu that ranges from 120 to 180 euros where you can try wild boar’s head wrapped in pork skin, stuffed with tongue and cheek and cooked for 40 hours, or the Italian porchetta with herbs, pistachios, fennel seeds, cooked at low temperature and dried for a month.

 

Restaurant Cabo Madrid

Their cuisine is based on the finest seasonal raw materials, respect for each ingredient, and the cooking time required for each product. They offer two menus, the classic menu, which is available from Tuesday to Friday (130 euros) or the seasonal menu, in which the dishes vary (185 euros). Favourites include such delicacies as the 2021 world’s best croquette, by Caritas Maita, the matured mestizo cow, or the petit fours for dessert.

 

El Club Allard

The figure behind El Club Allard is the famous chef Martín Berasategui, and the restaurant offers two menus, the 10 Tiempos menu for 155€, and the 15 Tiempos menu for 185€, both of which are defined as a succession of sensations that will have you glued to your chair with delicacies such as ravioli with roast aubergine and Iberian ham, or wild urta (a type of sea bream) and its cured tail with kombu, crapaudine beetroot and beurre blanc.

 

Restaurant Toki

At Toki restaurant we can take a culinary journey into the past by way of innovation and culinary tradition to arrive at the experience of Japanese haute cuisine. Toki is led by the entrepreneur Marcos Granda and offers bar food, with stellar dishes such as snapper sashimi with white asparagus and Irizar sauce or Galician clam chawanmushi.

 

Santerra

This restaurant in the heart of the Salamanca district offers a tasting menu that varies according to the season and the day, so every visit offers a different experience. The menu consists of 5 appetizers, 3 courses and 2 desserts and has a total price of 98€. In all dishes, pride of place goes to product-based cuisine fused with creativity, with the goal of letting the dishes speak for themselves. 

 

Desde 1911

Desde 1911 defines itself as Madrid’s fishing port and pays tribute to the well-known “Coruñesas” fishmongers with a cuisine that shows great respect for the sea. The restaurant offers 4 tasting menus ranging from 160 to 220 euros with a choice of three, four, five or six starters. The dishes are reinvented and evolve every day with the arrival of the freshest produce from our shores. The main course also features fish and the experience ends with a cheese and dessert platter.
